So as the semester carries on, it seems that I have less time to make my lunch and other meals for the day. I got to thinking I have plenty of time; I just have to pick the right meals.
Here are three meals that take at most 10 minutes to cook.
Did I mention you can cook each meal in the microwave, because you can.
Breakfast is the most important meal of the day, according to a majority of people, so why not eat some good food? Don’t get me wrong, I like cereal and oatmeal, but that is every once in a while.
What I don’t get enough of is eggs though. I love them. I am sharing my knowledge of microwave eggs with you.
Breakfast: Eggs
Start to finish: 1 minute
Servings: 1
1 or 2 eggs
1 tablespoon salsa (optional)
1 slice of cheese (optional)
Take the eggs and crack them in a glass cup or bowl. Stir with a fork to scramble. Microwave for 15 seconds, then stir again and repeat. I do 15 second increments and stir in between to let everything cook evenly.
After 30 seconds I add cheese. You can add whatever you want, even lunch meat like ham or turkey. Just evenly disperse your ingredients and mix well, then heat again for another 30 seconds.
If your microwave is not very powerful you may have to put your eggs in a bit longer. Just don’t put them in for too long, or you will have dry eggs.
Lunch: Quesadilla.
Start to finish: 3 minutes
Servings: 1
2 small tortillas
1 tablespoon butter
½ cup chopped choice veggies
½ cup shredded cheese
½ cup of meat
1 teaspoon of season salt
Take your tortillas and rub butter on each side. Put on a plate and heat in microwave for 30 seconds. Take out and separate if you are cooking two. Take your cheese and sprinkle on half of the tortilla. Make sure you have a nice layer covering the half of the tortillas.
Next take your choice of veggies and sprinkle on top of the cheese. Now add your meat. You can use hamburger or chicken if you have some, or if not you can use lunch meat. Whatever you have will work. Last add just a smidge of season salt, or any spices you like.
Make sure all your ingredients are on half of the tortilla, then fold in half. Stick back in the microwave and heat for one minute. Flip over and heat for another 30 seconds.
Take out and let your quesadillas cool down. You can now cut your quesadillas in half to make it easier to eat.
Dinner: Twice Baked Potatoes
Start to finish: 12 minutes
Servings: 1
1 large russet potato
1 tablespoon butter or margarine
3 tablespoons shredded cheese
salt and pepper to taste
3 teaspoons sour cream
Scrub the potato and poke several times with a fork. Place on a plate. Cook for 5 minutes in the microwave. Turn over, and continue to cook for 5 more minutes.
When the potato softens, remove from the microwave and cut in half lengthwise. Dig out the inside and put in a bowl. Season with salt and pepper and mash up. Add cheese and butter to the mix. Also this is when you can add whatever else you like on your baked potatoes. Load it up.
Place filling back into potato. Return to the microwave, and cook for about 1 minute to melt the cheese.
Put sour cream on top and enjoy.
Now you have a full day of homemade food and in it only takes about 16 minutes total, minus the eating of course.
